Cook at home the famous mapo tofu

If you are about to cook and eat mapo tofu for the first time be prepared for a saucy and spicy Chinese dish. The total time required to cook this dish is only 25 minutes and it serves as a main course. Mapo tofu is best eaten with white or Chinese rice.

These are the ingredients that you will require for mapo tofu recipe at home. The quantity given here will serve six.

Tofu: 15 – 16 ounces (regular tofu cut into 1 inch cubes)

Pork: 3 ounces (ground)

Green garlic chives: ½ cup (chopped to ½ inches)

Chinese chilli bean sauce: 1 tablespoon (toubanjan or doubanjiang)

Chinese brown bean sauce : 1 tablespoon (tenmienjan, tenmenjan or tenmenjiang)

Fermented black beans: 2 teaspoons (chopped finely)

Japanese dried red chilli pepper: 1/4th to ½ teaspoon (minced)

Chilli oil: 1 teaspoon

Chicken stock: 3/4th cup

Dry sherry: 1 tablespoon

Soy sauce: 1 teaspoon

Vegetable oil: 2 teaspoons

Salt: ½ teaspoon

Sesame oil: 1 teaspoon

Water: to boil tofu

Peppercorn: 1 tablespoon (optional)

Cornstarch Paste: Mix 1 tablespoon cornstarch with 1 tablespoon water to form a smooth paste.

Directions to cook mapo tofu recipe;

Heat water in a cooking pan, add ½ teaspoon salt and tofu pieces. Cook tofu for 6 to 8 minutes on medium heat. Tofu is very soft and breaks easily, boiling it in water hardens it enough to ensure that it doesn’t break during cooking. However, do not over boil it.

Now take a wok and heat it for 1 minute. Make sure that the wok is hot before adding 2 tablespoons of vegetable oil in it. Now add the ground pork and stir continuously to make sure that any lump is gone. When the ground pork turns brown add Chinese chilli bean sauce, Chinese brown bean sauce, fermented black beans and Japanese dried red chilli pepper. Now mix them all together and continue to cook for a minute.

Once it has cooked for a minute, add the tofu pieces to this mixture. Also add, chicken stock, soy sauce, garlic chives and chili oil to it. Now shake all this together and stir fry gently for 1-2 minutes.

Finally, add the cornstarch paste to thicken the gravy and some sesame oil. Cook for 3-4 minutes on medium heat. If you like it extra hot then you may add peppercorn on top.

Mapo tofu is ready to eat now. You could serve it with rice as a main course.
