Boneless Chicken Breast: 4 skinless pieces (4 ounce, cut into halves)
Blackened Steak Seasoning: 2 teaspoons
Cooking spray
Romaine Salad Greens (package): 1 (10 ounce)
Salad Cucumber: 1 cup sliced
Yellow Bell Pepper: 1 cup chopped
Olive Oil Vinaigrette: 1/3 cup (get a reduced-fat olive oil for this healthy Chicken Salad)
Tomato Chutney: 1 cup (any tomato chutney of your choice)

The preparation time for this salad is approximately 5 minutes and cooking it would take around 12 minutes. The portion of ingredients mentioned above would serve four.

Cooking Procedure

Heat a nonstick cooking pan over medium flame. While the pan is heating, season the chicken with steak seasoning and then coat it with cooking spray. Steak seasoning will give this healthy Chicken Salad the flavor but not the saturated fat that comes with steak. Once the skillet is hot put the chicken in it and cook till its done. Make sure to turn the pieces so that both sides are cooked alike.

Now take a large salad bowl and mix the salad greens with cucumber slices, chopped yellow bell pepper and olive oil. Toss well so that all the ingredients are mixed properly. Now take the cooked chicken pieces and slice them into thin strips. Since this quantity will serve four, take four serving plates and put equal amount of greens on them from the mixture in the salad bowl. Now place equal pieces of chicken on the greens. Finally, put a spoonful of your favorite tomato chutney and put it over the chicken for that extra tang. Your healthy Chicken Salad is ready.
