  • Liquid soap
  • pH test strips
  • Fiber-free cloths (chamois cloths)
  • Scrubber pads
  • Sanitizing solution

Step 1: use the two buckets to separate the washing and the sanitizing liquid from each other. Fill the first washing bucket half way through with clean water and add a dose of washing solution (liquid soap) as per instructions.

Step 2: fill the other bucket with water and add sanitizing solution based on the recommended dosage. It is important to take note that the sanitizing solution should not be too acidic as it would ruin the natural colour of your wooden restaurant table top. If the solution is too acidic, try diluting it with more water unless you’re cleaning cheap restaurant furniture in which case acidic sanitizing solutions would not be much of a concern.

Step 3: saturate the scrubber pad with the washing solution in the first bucket and wash the surface of the table. Start in the centre of the table and work your way to the sides and edges towards the underside. Make sure that every inch is cleaned and leave no strands of food particles attached. Use a dry cloth to wipe the liquid away and let it dry outside for 30 minutes.

Step 4: once the table has dried out, use the chamois cloth saturated with sanitizing solution to sanitize the table’s surface. Include all edges during the procedure and allow another 30 minutes to let the table dry without wiping it with dry cloth.

Step 5: repeat these steps every day before the day’s shift ends. Make sure to eliminate all dirt, grime, and bacteria before leaving the restaurant. It is also important to look for gums in the underside of the tables. Include the table legs in the washing and sanitizing and avoid placing sanitized tables together with unclean ones to avoid contamination.
